Ingredients:
- 1-2 tablespoons vegetable oil
- 2 pounds cubed or thinly sliced beef
- ½ teaspoon salt
- 2 cans (14½ oz. each) canned tomatoes
- 1/3 cup brown sugar
- 1/3 cup vinegar
- ½ cup finely chopped onion
- 1 green pepper, coarsely chopped
Directions:
- Put vegetable oil in large electric skillet; brown beef on all sides. Add salt, tomatoes, brown sugar, vinegar, and onion. Cover skillet; lower heat. Let simmer about 2 hours, until beef is tender. Add green pepper to beef; cook 10 minutes longer to blend all flavors. Serve with hot rice. Yield 6 to 8 servings.
